Things Making Me Happy: 1.11.21

Well, what a doozy last week was…

You may have noticed that I took a little blogging/podcasting break for the holidays and, yeah, it was definitely needed.  I have a blog post coming later this week where I talk about my COVID travel experience (highly requested over on Instagram) and, honestly, after the madness of last week I’m still kind of just reeling and trying to gather up my thoughts and feelings on what is already a crazy start to 2021.

In the mean time, I spent all of yesterday doing a slight digital detox (ok, I DID check Insta quickly about three times, lol) and doing lots of reading (more on that below).

A gourmet-looking breakfast (that’s also super easy and healthy)

Food TikTok did it again.  I stumbled upon this healthy egg baked tortilla from @MealsWithMax and OMG it was so easy and sooo good and I love how you can really customize it based on what you have on-hand.  I used my favorite high fiber/low carb tortillas, two eggs, a splash of egg whites, chopped cherry tomatoes, basil, salt and pepper.  Honestly, the presentation alone is just *chef’s kiss.*

I’ve tried tons and I mean TONS of leggings over the years, and especially those that claim to be “high wasted.” Well, as someone who has a long torso, I can tell you that these perfect leggings, in fact ARE actually high wasted (most are not on me), AND are literally the perfect mix of soft and thick fabric so that you feel supported but it doesn’t feel like you’re wearing uncomfortable Spanx, you know?  I’m buying two more pairs before they sell out – it’s THAT serious.

Make Your Bed: Little Things That Can Change Your Life…And Maybe the World

I bought this book soooo long ago but, since I have book ADD, I started it and never actually finished it until yesterday.  It’s short and sweet but definitely a New York Times bestseller for good reason; I absolutely love hearing stories from former U.S. Navy SEALs. Honestly it’s become a new hobby, lol. And I think a lot of it has to do with the pure level of discipline these men have/had to have during training.

This book, in particular, was based off Admiral William H. McRaven’s speech that he gave to the graduating class of the University of Texas at Austin on May 17, 2014.  The original speech went viral with over 10 million views. He essentially shares the ten principles he learned during Navy SEAL training that helped him overcome challenges. Challenges not only in his training and long Naval career, but also throughout his life.  It’s honestly and truly inspirational, and I think everyone should read this book.

ABC's LOST

Rewatching LOST

I can’t even tell you how much I’ve been enjoying my rewatch of ABC’s LOST.  I was always a casual watcher back when it was on TV. So even though I know how the show ends (no spoilers here!), I actually don’t remember much of what happened after season two.  The show is still super confusing. But I love the Kate/Jack/Sawyer love triangle forever and always…not to mention the whole being stranded on a desert island story line, which will always be 100% in my wheelhouse of interest.  You can watch the whole series on HULU, btw 🙂
