My latest piece for Shape.com: Healthy One-Pot Meals

Many of you might know that I recently started freelancing for Shape.com and it’s quickly becoming a big obsession for me, e.g. researching and learning about healthy recipes.  Yes, I said it.  The girl who literally never cooked anything aside from pasta (until maybe four years ago) is now writing articles about COOKING.  It’s a big accomplishment for me, both as a writer AND as a 30-year-old who used to literally live on NYC Chinese takeout and salads from Chipotle.  Ok, so I still probably get salads from Chipotle at least twice a week (they are GOOD, guys), but at least now I can feasibly make simple and healthy things for myself.  Case and point, THESE recipes for healthy one-pot meals.  Tell me, what are your easy go-to meals?

Healthy Asparagus and Tomato Frittata

As you guys know, I’m so NOT a cook.  But since I do work from home now, and I am in the middle of August Anarchy, I’ve been making a bigger effort to cook almost every meal at home.  The other night I was looking at Instagram and saw Sydne posted a photo of what looked like a frittata, but apparently was, in fact, NOT a frittata.  Regardless, her photo inspired me to use the veggies that I had in my fridge, asparagus and tomatoes, to make a delicious high-protein meal.  Here’s the recipe, which I adapted from a Better Homes & Gardens recipe.

Healthy Asparagus and Tomato Frittata

  • Makes: 8 servings
  • Prep: 30 mins
  • Bake: 35 mins
  • Stand: 10 mins
  • Oven: 350°F

Ingredients:

  • Nonstick cooking spray
  • 12 ounces fresh asparagus
  • 1/4 cup chopped tomatoes
  • 6 eggs
  • 2 egg whites
  • 3/4 teaspoon sea salt
  • 1/2 teaspoon ground black pepper

Directions:

  • Preheat oven to 350 degrees
  • Lightly coat a 2-quart rectangular baking dish with nonstick cooking spray; set aside
  • Take asparagus, snap off and discard woody bases. If desired, scrape off scales. Cut into 1-inch-long pieces
  • In a large bowl, whisk together egg product, sea salt, and black pepper, until well-mixed
  • Pour over vegetables in baking dish
  • Bake, uncovered, about 35 minutes or until slightly puffed and top shakes set
  • Let stand for 10 minutes before serving

Sautéd Kale and Avocado Salad

You know when you feel like you want something to eat but you’re not quite that hungry?  I felt that way today, after eating a big breakfast.  It was around 2pm and I knew that if I didn’t eat then, I would be hungry by 4 and then my dinner schedule would get ALL KINDS of messed up. UGH, it’s a tough life, lol.  Anywho, I came across this recipe on Shape.com and it looks so good (and easy).  I skipped the quinoa and apple, since  I didn’t have any at home, but the combo of sauted kale and avocado is light and yet, I’m still satisfied.  Oh, and two words for you: truffle salt.

Cocktail Alert: Standard Watermelon Martini

Watermelon is just the fruit of summer, and you know it.  I recently tested out this delicious watermelon martini recipe from Russian Standard Vodka and I’m completely obsessed.

STANDARD WATERMELON MARTINI

  • 2 oz. Russian Standard Original
  • 2 oz. fresh watermelon juice
  • ¼ oz. simple syrup
  • 1 slice of watermelon

Shake with ice and strain into chilled coupe. Garnish with fresh watermelon.
